Brunch with bacon and eggs

This is one of the fast recipes. It is simple, but very tasty! There is nothing exquisite in a recipe with bacon, nor sophisticated in eggs with bread.  However, I’m telling you, you are going to do it again 🙂  The combination of soft eggs, bacon and crispy bread is delicious!

The healthier version of this recipe is replacing the bacon with smoked salmon. Unfortunately, my daughter does not eat smoked salmon, only grilled salmon.  For this reason, I used bacon.

Ingredients (20 minutes, 4 servings):


  • 4 kaiser buns
  • 4 bacon slices or smoked salmon
  • 4 medium eggs
  • you can add optionally some chives

Preheat the oven to 180ºC. Cut the top of the buns and carefully remove the core. Put the buns on an oven tray covered with a baking sheet.  Arrange inside the buns the bacon (or the smoked salmon) covering the edges of the bread.  Break an egg in each kaiser bun. I did not use chives anymore because I totally forgot to buy them 🙂  Put the tray in the oven for  12-15 minutes or until the eggs are done. Sprinkle some chopped chives at the end (if you don’t forget to buy them)!

Calories: 294 cal/serving (with bacon) or 238 cal/serving (with smoked salmon)
