The Christmas of the pandemic year 2020 brought great praise to a common biscuit salami, enhanced with some crispy pistachios and rum, plus dark chocolate because in the meantime I learned what is good in life! I repeated the salami operation three times a week. In my childhood, my mother made this easy and delicious dessert in its traditional version with cocoa and milk. Biscuit salami is an Italian dessert, without baking, consisting of cocoa, small biscuit pieces, butter, and sometimes nuts. Everyone has their own version of this classic Italian dessert. The texture of the combination of crispy biscuits with chocolate and pistachio is a real delight (my opinion)!
What you need:
- 400 gr vanilla biscuits (or graham crackers)
- 320 gr chocolate with 70% cocoa
- 240 ml liquid cream
- 60 gr unsalted butter
- 120 gr pistachio (fried, salted, and without shell)
- rum essence
- powdered sugar for coating (optional)
How you make it:
- First, melt the chocolate, then add the whipped cream and unsalted butter. Stir until smooth.
- Add the crushed biscuits and the chopped pistachios. You can add any other kind of nuts you like. Mix well to make sure all ingredients are evenly distributed. Add the essence of rum.
- Put this mixture on a sheet of plastic wrap and wrap it tightly into a salami shape. Tie both ends and refrigerate it for about 4 hours until it solidifies.
- After 4 long hours of waiting, take out this wonderful thing and roll it in powdered sugar (obviously, after removing it from the plastic wrap).
- You wrap it nicely in baking paper so that everyone thinks you bought it 🙂

You can keep the biscuit salami in an airtight container in the refrigerator for up to 2 weeks. Personally, I like to eat it cold, it seems to me that it tastes much better like that.
