A healthy breakfast isn’t just a morning ritual—it’s the fuel that powers your day. And no, it doesn’t have to be fancy or time-consuming. Ideally, your breakfast should be nutritionally balanced to give you the energy and focus you need to tackle the hours ahead.
Now, don’t get me wrong—I absolutely adore slow, lazy mornings spent in pajamas with a hot cup of coffee and nowhere to be. But let’s be real: those moments are weekend luxuries. On weekdays, I’m usually more of a minimalist. A cup of coffee, a hard-boiled egg, maybe a piece of fruit—or if I’m feeling ambitious, a smoothie I can sip while answering emails.And then, there’s my go-to obsession: avocado toast. If I spot ripe avocados in the fridge, there’s a 99% chance they’re destined for my morning plate.
If you’re like me and looking for quick, wholesome, and delicious breakfast ideas that actually make you want to eat in the morning, here are a few of my tried-and-true favorites:
1. Avocado – Egg Toast
- 1 or 2 slices wholemeal bread (or sourdough bread)
- 1/2 avocado
- 1 boiled egg
- salt and pepper
How to make it (and trust me, you’ll want to):
Start by toasting your favorite bread—sure, you could use it fresh, but that golden crunch? Totally worth it.
Next, grab a ripe avocado and mash it right onto the warm toast with a fork.
Slice up a boiled egg and layer it gently on top like the crown it deserves to be.
Sprinkle a pinch of salt and a crack of black pepper to bring it all to life.
That’s it. Simple, satisfying, and totally delicious.
2. Healthy Banana Pancakes
- 1 banana
- 1 egg
- 30 ml normal/almond/soy/oats milk
- 4 tbs of ground oats
- fruits of your choice (berries, billions of berries)
How to Make Them (a.k.a. The Easiest Healthy Pancakes Ever):
Start by mashing a ripe banana with a fork in a bowl—no fancy tools needed, just a little elbow grease.
Crack an egg, pour in a splash of milk, and stir until the mix is nice and smooth.
Now, add ground oats until the batter gets that just-right consistency (thick, but pourable).
Heat up a non-stick pan and melt a bit of coconut butter (or regular butter—no stress if that’s all you have).
Spoon the batter in and cook your pancakes for about 3 minutes per side, or until golden and fluffy.
Top them off with fresh fruit—whatever you have on hand or love most.
Want to take it to the next level? Add a dollop of Greek yogurt, your favorite fruit, and drizzle with a touch of honey.
That’s it! Breakfast (or snack, or even dinner—I won’t tell) is served.
3. Salmon – Fresh Cheese Toast
- 1 or 2 slices wholemeal bread
- 2 tsp of fresh cheese (Philadelphia or something similar)
- a handful of arugula
- 2 slices smoked salmon
- pepper
How to make it (and fall a little in love with your breakfast):
Spread a generous layer of fresh cheese over warm, crunchy toast—don’t be shy.
Top it with a handful of peppery arugula (and a few crisp cucumber or radish slices, if that’s your thing).
Lay down those beautiful slices of smoked salmon like you mean it.
Finish with a twist of freshly ground pepper—and voilà, breakfast bliss on a plate.
4. Oatmeal Pudding
- 5 tbs oats
- 3 tbs yogurt
- 1 tbs protein powder (optional)
- banana slices
- blueberries
- a little honey if you want it sweeter
- norma/almond milk
How to make it (and fall in love with breakfast again):
Toss all the ingredients into a jar or a bowl with a lid — something cozy with enough space to work its magic.
Close it up tight and give it a good shake, like you’re waking up your taste buds in advance.
Pop it in the fridge and let it rest overnight while you dream of better mornings.
Before serving, feel free to top it with extra fruit, because you deserve a little extra sweetness.
5. Peanut Butter and Banana Toast
- 1 slice toasted bread
- 1 tsp peanut butter
- 1/2 banana
How to make it (aka your new favorite breakfast):
Grab a slice of toast and give it a generous swipe of peanut butter—don’t be shy.
Top it with as many banana slices as your heart desires.
Feeling fancy? Drizzle a little honey on top for that sweet finishing touch.
